As one of the farms known for its innovation, Finca La Palma y El Tucan ("the Palm tree and the Toucan") also put effort into sharing the technology and knowledge they have to small coffee producers. In this Neighbours & Crops (N&C) project, the goal is to raise the quality of coffee in order to fight for fairer revenues for the farmers.
This lot by Miguel Angel Muñoz, hence the name, is a part of N&C. Lactic fermentation creates a unique lactic acidity, which is bright, tropical fruit-punchy but also syrupy with wine tones.
